TOFU BUN BO NAM BO RECIPE

A quick and easy week-day dinner or lunch filled with loads of fresh herbs, citrus notes and umami from the smoked &baked tofu with a touch of crunchiness from the Fried onions and peanuts.


YOU WILL NEED:


1 package rice noodles (ca. 250g)

2 red peppers chopped roughly

1 lemons

1 package of smoked tofu

fried onions for toppings

6 table spoons of rice vinegar ( for marinade & sauce)

4 table spoons soy sauce

2 table spoons of grinded ginger

2 pieces of garlic (pressed)

peanuts, black sesame, koriander & mint leaves as toppings

1 tablespoon of tahini


DIRECTIONS:


Start with cutting the tofu in cubes and making the marinade. for the marinade add 1 tablespoon of tahini with a pressed garlic and 2 table spoons of soy sauce. let the tofu rest in the marinade for at least 10 minutes and then put them in the oven for 20 minutes on 180 degrees celcius.


Next up start chopping the herbs, peppers and peanuts and put them aside.


Now its time to mix together the rice vinegar, 1 garlic, ginger, soy sauce and lemon for a light but very intense flavored sauce for the noodles.


Last but not least cook the rice noodles, according to which brand and kind you choose make sure to follow the directions on the specific package properly and add salt to the water.

I also like to add a bit of rice vinegar to the water for a little infused taste!


Now you just have to take the tofu out of the oven, drain the rice noodles and add the ginger-vinegar sauce and toppings and voila! a vegan version of the infamous Vietnamese dish bun bo nam bo :-)
