RICE NOODLE VEGETABLE STIR FRY

Welcome back guys! Today on the blog Im sharing this Rice Noodle vegetable & Tofu stir fry which is really perfect for a asian inspired lunch or dinner, and easy to whip together as it doesnt take very long to cook or prep. the recipe is inspired by common flavours of Thailands cuisine, which have a special place in my heart.

After Living in Thailand for 6 months I completely fell in love with their culture and cuisine. The mix between ginger, garlic, chili and lime with a dazzle of thai basil leafes or koriander on top is in my book un-beatable! in this dish you have the spicy, the sour, the sweet, the bitter and Umami flavours all blended together.
What I always really admired the local chefs in thailand for, was their ability to combine every taste so perfectly that the overall dish becomes truly amazing, despite it being very simple to make. That is in my eyes the art of cooking! making something mind blowingly simple taste like it took hours in the kitchen!
so without further ado - Let‘s get cooking!

WHAT YOU WILL NEED

200G almond or smoked tofu
160g of rice noodles
1 piece of ginger
2 garlic
2 limes
2 table spoons of rice vinegar
8 baby corn
2 table spoons of soy sauce
1 table spoons of sesame oil
2 fresh chilis (optional)
a tablespoon of koriander
2 tablespoons of sunflowerseed oil
200ml of water

DIRECTIONS
start with finely cutting the garlic, ginger and 1 of the chilis, now add the sunflowerseed oil to a wok or pan and turn it on a medium high temperature, when the pan is hot add the cut garlic,ginger and chili. stir it well and after 2-3 minutes add the cut tofu, babycorn, rice vinegar, soy sauce, sesame oil, water and rice noodles. now turn the heat high and continue stirring for 5 minutes or until the water is absorbed by the noodles and they are done. lastly, add a little bit of fresh koriander, lime and chili and serve while its still hot :-)
