svensk pølsegryde (vegansk) / Swedish Sausage stew (vegan)

This is a recipe I‘ve been wanting to do for ages, as its something I grew up with eating every summer for dinner at our little blue summer house outside of Copenhagen.

All of the nice summer evenings as a child playing in the garden of the summer house, then running home just to have this delicious treat waiting for you while the sun sets over the blue terrace. Pure bliss.

Im Happy to report that this version tastes just at good as the original - if not better, by the added morality that comes a long, considering no animals were hurt in the process of making it ;)

Its funny how in Scandinavia this dish is so personalized and like many other famous dishes around the world, every mom has her own special way of doing if, which everyone in the family then swears by!

My Mom always used to add spring onions and pasta to ours, but I‘ll leave you with a more simplified version and then maybe you can add other ingredients into it and make your very own personalized swedish-family-stew recipe.

WHAT YOU WILL NEED:

2 ONIONS

8 TOFU SAUSAGES

2 TEASPOONS OF SMOKED PAPRIKA

2 TABLE SPOONS OF WHITE WINE VINEGAR

3 TABLE SPOONS OF PUREED TOMATO

3 TABLESPOONS OF SOYA CREAM

1 CLOVE OF GARLIC

3 TABLE SPOONS OF COCONUT OIL OR MARGARINE

SALT AND PEPPER TO TASTE

DIRECTIONS:

Cut the potatoes into squares and cook them for approx. 8 mins. or until theyre almost soft.

let the potatoes cool under cold water so they dont cook any further and start cutting your veggie sausages and onions into smaller pieces, and pressing the garlic. add soya cream, pureed tomato and vinegar to a bowl and mix it well, put it aside for later use.

then add the coconut oil to a medium hot pot and add the onions, garlic, smoked paprika, potatoes and sausages. stir well and be sure that it doesnt burn at the bottom. watch over it for approx. 6 mins and when the onions are cooked, potatoes and sausages start to get light brown add in the mix of the pureed tomatoes, vinegar, and soya cream. stir well for another 5 minutes and then finish by adding salt and pepper to your required taste.
