CHRISTMAS SPICE NUT COOKIES (GF, sugarfree, Vegan)

Disclaimer:

I am a terrible baker.

I LOVE cooking, and i like baking, but i somehow always end up messing something up in the process of baking (yes, even when i follow recipes).

8 out of 10 times it turns into a disaster of either uncooked liquid cake batter, or a completely dry or burned result.

I‘ve come to the conclusion that if a cake needs to be done by me, and turn out good, it needs to have a small amount of ingredients, VERY clear guidelines, and be simple and easy to make quickly (so it is basically done before i can mess it up)

Being a terrible baker do have its benefits though!

1. you get to eat lots of uncooked cake batter (yum)

2. you need to bake a lot and re-do cake projects when they don‘t turn out good -which means you get to eat more cake (Y)

3. plus, theyre healthy so they wont make you feel guilty! (win-win-win)

Since i‘ve been trying to improve some cake recipes for a while now, it dawned on me that actually, i dont have a bullet proof, easy ,cookie recipe!

As christmas is coming closer, and i know im gonna crave ALL the christmas treats, i thought it was about time to figure out a easy christmas cookie recipe that could be done with things i always have laying around in the kitchen anyways.

So here it is! these cookies are spicy, nutty, oaty and packed with flavours of cardamon, cinnamon and cloves, which compliments the brazilian nut and oats really well. i‘ve added banana for sweetness and texture, as i dont like to use sugar.

WHAT YOU‘LL NEED

3 TABLE SPOONS OF PEANUT BUTTER

1 CUP OATS

1 CUP PLANTBASED MILK

1 CUP OF BRAZIL NUTS

2 RIPE BANANAS

1 TEASPOON OF REAL CINNAMON

1 TEASPOON OF CARDAMON

2 PIECES OF CLOVES

1 TEASPOON OF BAKING POWDER

Simply add all the dry ingredients to the food processor, and run for 1 minute and then add in the liquids and bananas (so oatmilk, peanutbutter and bananas go last) let it run for about 2-4 minutes and then form into cookie shapes on a sheet of parchment paper.

Pre-heat the oven to 180° and bake them for 10-15 minutes.

Then finish with either putting melted chocolate, peanut butter, almond butter or nuts on as toppings. or you can completely leave out the toppings and eat them plain.

If you want you can also fill them with chocolate chips, use other sweeteners (if you dont like natural sweetener like banana) add in some orange juice or use whatever other spices that you prefer. I personally really like the mix of cloves, cardamom and cinnamon, as it gives me that chrismas taste but they would also work well as a base for peanut butter chocolate chip cookies.
