COFFEE BANANA CHIA PARFAIT - VEGAN RECIPES

I‘ve always been obsessed with the taste of coffee. but as of lately, i just dont find my usual morning coffee that interesting anymore, and often, i dont even manage to finish it.
At the same time, i‘ve been really bad at remembering to eat breakfast for a while now, and all i usually crave in the morning is coffee and/or fruit.
so i thought, why not try to make a healthier breakfast which has the flavor of coffee but also fills you up and gives your body energy for the day, while being easy to do the night before and have it be ready in the morning to eat quick or even bring on the go.
After thinking of different ways i could implement the taste of coffee in a breakfast i came up with this sweet chia, Banana coffee mango breakfast treat.
YOU WILL NEED

1 CUP OF FROZEN MANGO
1 CUP OF FROZEN BANANAS
1 CUP OF COFFEE (COOLED)
1 CUP OF PLANT MILK (I USED OAT)
3 TABLESPOONS OF CHIA SEEDS
HALF A CUP OF COCONUT MILK
4 TABLESPOONS OF OAT MILK (OPTIONAL)

Start adding the chia seeds, oatmilk and coconut milk. Then put it in a mason jar with a lid, and shake it well. Leave it over night, and if possible, shake it a few hours in between.
Then continue with blending the coffee, plantmilk, frozen bananas and mango together. and put in a glass in the fridge for the next day (or same day if your eating it later in the day) simply layer the mango, banana, coffee smoothie and the chia pudding and your breakfast is good to go!
Side note* in my opinion, if you use only plantmilk for chia pudding it becomes too liquid or you will have to add a ton of seeds. on the other hand, if you only use coconut milk, the consistency is perfect, but the taste of coconut can easily become a little too much.
So i usually mix coconut milk and oat milk as i feel it gives the perfect balance of creamy consistency and flavor which is not too sweet and coconutty.
