EASY VEGAN CHILI SIN CARNE - VEGAN RECIPES

Vegan chili was one of the first vegan recipes i learned how to make when i first decided to go vegan. I think its safe to say it was a life saver in the first months where i felt like there was ‘nothing‘ i could eat.


Though i‘ve eaten A LOT of it, i never seem to get tired of it, as i always change some ingredients for others (like different bean types or herbs) to give it a different taste.


This ones a pretty basic one, which would be good for someone just starting out as a vegan. or it can be used as a base and then afterwards you can build it up and add more things to it.

The fake meat can be left out or subbed for other fake meat types.


I like to cook A lot of it and then leave it for a day or two, and then add more things over the days, or freeze it in portion sized bags if im having a busy week where theres not a lot of time for cooking.


WHAT YOU WILL NEED

3 carrots

650g mixed beans (kidney beans, black beans, white beans)

1 Garlic clove

3 Onions

500g tomato sauce

530g cooked lentils

800g canned tomatoes

4 chopped up tomatoes

1 teaspoon of paprika

1 teaspoon of dried chili

3 tablespoons of oil (i used sunflower)

285g of corn

150g of dried soya meat substitute (optional)

I start with adding the oil, garlic, onions and spices (chili and paprika). then i let it fry for a few minutes and then i add the carrots, beans and other veggies. i always add the veggies that take the longest to cook first and then after a few minutes add in the ones that take less time to cook. so, tomatoes, corn and beans go last. then after 5-6 minutes i add in the tomato sauce and canned tomatoes and after a few minutes the meat substitute and let it simmer for about 20 minutes before finishing it off with any herbs or other spices that i feel like adding.
