CREAMY DILL COCONUT PEA SOUP - VEGAN RECIPES

Autumn.
as soon as the refreshing winds of autumn starts coming in, i immediately start craving soup and filling, hearty dishes.
This soup has been one of my main obsessions in the autumn and winter months for the last 2 years. And for a good reason! its Creamy, filling and has a slightly sweet flavour to it.
The soup is very simple and requires only 4 ingredients, which makes it easy to make when you come home after a long day at work, or when you simply want something delicious but dont want to stand in the kitchen for hours.
It can even be made beforehand so its easy to just heat it up and enjoy it straight away. i also find it a very good and easy dish for when you‘re having guests over and feel like you want to make something effortless but delicious.
Even though the soup is so simple to make, i always get complimented on it by guests that want to know how i make it, so i thought i would share it here, for everyone to have the pleasure of this delicious soup to warm them up in the upcoming cold months.
WHAT YOU WILL NEED __________________________________________________________________
1 can of coconut milk
2 tablespoons of fresh dill
2 medium sized onions (optional)
1 bag of frozen peas (1000g)
2 cups of water
2 teaspoons of vegetable broth

Add Peas, chopped onions, vegetable broth and water to a medium sized pot and boil. when the peas and onions are completely cooked out, add coconut milk and dill and leave for 2 minutes, then turn off the heat.

Take your hand mixer and mix all of the things until smooth, let the soup cool down a little and then your dinner is ready!
