MUSHROOM POTATO QUICHE - VEGAN RECIPES

When we Think of Quiche what comes to mind is often everything that is not vegan: eggs, milk, cheese and meat.

Not exactly a vegan friendly dish. Growing up in Denmark Ive Been used to Eating a lot of Quiche, and even though i choose not to eat eggs, Meat or dairy anymore i Can still have moments where i miss the taste of those traditional meals that i grew up with.

So i thought it was finally time to try and make a veganized version of the Quiche. This Quiche is airy, fluffy and full of flavor. I put mushrooms, onions, spinach and potatoes in mine, but its One of those recipes where you Can easily swap out the vegetables for other ones that you already have, or that Fits to your liking.

The filling is based on tofu, Kala Namak salt Which gives it the eggy flavor and in combination with the mushrooms and onions it becomes a very Rich and Hearty flavored dish Which i personaly really like.

WHAT YOU WILL NEED

• Half of a Lemons juice • 400g of hard natural tofu • 3 small potatoes cut into small pieces • 3 table spoons of plant milk (i used oatmilk) • 5 Big mushrooms cut into small squares • 2 table spoons of olive Oil • 2 teaspoons of Kala namak salt (to give it the eggy flavour) • 1 teaspoon of Tumeric (optional) • 3 table spoons of chickpea flour (optional and Can Also be subbed for any other flour) • 2 medium sized onions

Put it all in a food processor and mix it until everything is roughly Mixed together and Then transfer it into your Baking mold where you already placed Your vegan Pie crust.

You Can choose to either buy a ready made pie Crust, or make One yourself.

I chose the easy option and bought One.

After placing the filling in the pie Crust you simply pop it in the oven for 30-35 minutes on 180 degrees and check on it every 10 minutes. i chose to put a bit of shredded vegan cheese on top of mine, but it is completely optional.

The end result is savory, indulgent and very filling 😋
